This classic cow's milk cheddar is produced at Neal's Yard Dairy near Alford. It has a rich, long lasting flavour with sweet, nutty notes & a dense and creamy texture.
A soft cow's milk cheese produced by the Oxford Cheese company. It is a pale, soft cheese which is encased in a rind that is then sprayed with mead wine and ripened with local honey.
Produced in Swaledale, this cow's milk cheese has a creamy yellow colour with a close, moist texture. The gentle nature of this particular smoking technique creates a mild & nutty smoked flavour.
This goat's cheese is styled on a Valency style French cheese. The curd is drained and moulded into a pyramid shape & left to sit in humidity to encourage mould growth on the exterior.
Made from ewe's milk, this blue cheese is left to mature in a purpose built cave. It has a sweet, nutty inner flavour which creates a great juxtaposition against the slight bitterness of the blueing.
This goat's milk cheese is produced in Cottingham near Hull by Tom Wallis at Lowna Dairy. Tom is that passionate he knows each of his goats by name & this love for his animals shows in this creamy, clean textured cheese.
This cheese was originally created by Alex James from the band Blur & is named after his favourite song, Blue Monday by New Order. This complex, rich, creamy blue develops into a soft, mellow cheese.
